Recipes ====================================================== Russian Tea Cakes ====================================================== Oven Temperature: 350 degrees Ingredients: 1 cup of butter (room temperature) 1/2 cup of powdered sugar 1 tsp. Vanilla 1/4 tsp. Salt 2 1/4 cups flour 3/4 cup walnuts (finely chopped) Mis butter, powdered sugar, vanilla and salt until smooth. Gradually add flour to mixture. Mix in walnuts. Dough might be easier to handle if you refrigerate for about an hour before rolling dough into balls to bake. Roll dough into 1 inch balls and bake for 8-10 minutes or until cookie is firm to the touch. Roll warm cookies in powdered sugar and again right before serving. ====================================================== Pub Cheese ====================================================== This cheese is great as a spread, not thin enough to be a dip as much. 1 8 ounce package of cream cheese (softened) 1 8 ounce plastic tub of sharp cheddar cheese (softened) (preferably Wise Spread brand) 1/2 to 1 teaspoon of Worcestershire sauce (depending on taste) 1/2 or 1 teaspoon horseradish (depending on taste) Combine all ingredients into a stand mixer (if you do not have one you can use a blender or a food processor) and mis together until well blended. Place into a plastic container and refrigerate for at least 8-12 hours. Let stand for at least 15 minutes before serving. Plate with Wheat Thins or your favorite cracker. ====================================================== Tortilla Dip ====================================================== This dip is absolutely delicious. It's not as thick as some cheese-based dips so it won't break the tortilla chips. On the other hand, you can't use it as a spread. 8 oz. pkg. Cream Cheese ½ Cup Sour Cream ½ Cup Salsa 1 ½ tsp Chili Powder 1 tsp Ground Cumin 1/8 tsp Ground Red Pepper (I use paprika and just sprinkle in) Combine all the ingredients. Garnish with chopped scallions if desired and serve with nacho chips. ====================================================== Caramel Brownies ====================================================== Preheat oven to 350 degrees. Grease a 13x9 baking pan. 1 cup flour 2 tsp. baking powder 1 tsp. salt 5/8 cup of shortening 2 cups brown sugar 2 eggs 2 tsp. vanilla 1 cup nuts Cream shortening and brown sugar. Add eggs, beating after each. Add vanilla and dry ingredients, mix well. Mix in nuts. Pour into prepared pan and spread evenly. Bake approximately 30 minutes until golden brown. Note: Do not test with atoothpick, the inside heats like caramel and the toothpick would not come out clean unless way over done. Let cool completely before cutting, they will otherwise be too soft.
